Add the first three ingredients to a shaker tin, muddle well,
add coriander and muddle some more.
Fill shaker with ice, add juices and shake vigorously until a froth has formed.
Strain through a tea-strainer into a chilled martini glass. Garnish with a single coriander leaf.
